Easy Student Meals

Sometimes you need comfort food and other times you just want whatever will be the easiest to get on the table. Whether you are in a rush or dead tired after a long day, these meals won’t take long to make or devour!

  • Bacon Mac and Cheese

Crispy bacon mixed with gooey, warm mac and cheese - it’s one of my favourite “student” meals to make and eat (#carblover). I usually opt for white cheddar mac and cheese from President's Choice. Boil water in a medium pot while you cook the bacon on a low setting. I use a full pack but you could easily half that. Once the bacon is ready, chop it up, and throw it into your favourite prepared boxed mac and cheese. If you’re feeling fancy, sprinkle some bread crumbs on top and broil it in the oven for a hot minute. Yum!

  • Breakfast Smoothies

I’m usually rushing around in the morning and sitting down to eat is always the first step I overlook when I’m trying to be on time – #badhabit! Making a smoothie in the morning helps me tackle that whole “most important meal of the day” thing. Here is a quick 5-minute breakfast smoothie recipe. Pour yours into a to-go cup and drink it on your way to class.


1 cup of your favourite frozen fruit

¾ cup milk (substitute soy or almond milk for dietary restrictions)

½ cup vanilla or plain yogurt (again, substitute if that’s your thing)

½ cup of your favourite fruit juice (I love Farmboy’s White Cranberry juice with strawberry smoothies)

2 tbsp of honey


Put all of the ingredients in a blender and process until smooth. Pour into a glass or to-go container and enjoy!

  • Greek Salad

Greek salad is actually super easy to make and it is a great lunch to pack for days on campus.


Chop up ½ of a head of romaine lettuce, ½ an English cucumber and ½ a large red onion. Slice a handful of cherry tomatoes into quarters. Mix these ingredients in a large bowl or Tupperware container. I use one chopped green pepper as well; you can add a can of pitted black olives or chopped red pepper if you like. Crumble ¾ cup of feta cheese over top and ground pepper to taste.


Dressing? Buy a store-bought Greek dressing (my favourite is from Farmboy). Or, make your own: mix juice from half a lemon, 4 tbsp olive oil and 1 tsp crushed dried oregano.
